Classic Flavor — Exclusive Secret Chopped Chili
Fresh red chilies and garlic are rinsed with boiled-then-cooled water, dried thoroughly, and minced together into a bright, salty-hot condiment that keeps remarkably well.
Instructions
- 1
Prepare the ingredients: red chili peppers and single garlic cloves (this time I used a ratio of 2:1, which can be adjusted according to personal taste).
- 2
After peeling the garlic, wash it with water, then put it in cool boiled water and wash it again (this is crucial; washing with cool boiled water when pickling vegetables can reduce the intake of bacteria). Use oil-absorbing paper to dry the moisture, and set aside.
- 3
Red chili peppers, do not remove the stems, wash them whole with water, then put them in cold boiled water and wash them again, and use oil-absorbing paper to absorb the moisture.
- 4
After using oil-absorbing paper to soak up the moisture from the red chili peppers, wipe them dry, remove the stems, and set aside.
- 5
Place the garlic on the cutting board, cut it in half first, then crush it with the knife before chopping it into pieces.
- 6
Cut the red chili pepper diagonally into strips, then cut into small pieces
- 7
Put the chopped garlic and chili into a bowl, add salt, and mix well.
- 8
Let the mixed chili sit for a while to marinate.
- 9
Put the mixed chili into the prepared glass jar, and use chopsticks to poke a few small holes in the middle and around the edges of the jar.
- 10
Add a little sesame oil to the bottle (you can adjust the amount according to personal preference), and the delicious chopped chili is ready. (In summer, it can be eaten after marinating overnight, while in winter it needs to marinate for a few more days.)
