Clay Pot Chicken Soup
A rustic whole chicken slow-stewed in a clay pot with cinnamon, bay leaves, scallion, and ginger tucked inside the cavity, seasoned with soy and oyster sauce for a savory, aromatic broth.
Instructions
- 1
Prepare a chicken 🐔, the ones bought from the supermarket are already cleaned. Prepare some cinnamon sticks, bay leaves, chopped green onions, and ginger.
- 2
Soak the goji berries for a few minutes, wash them clean, and remove the dust from the fried noodles.
- 3
Put green onions, ginger, bay leaves, and cinnamon inside the chicken's stomach. Sprinkle goji berries and put it into a clay pot.
- 4
Add clear water, just enough to not cover the chicken.
- 5
Bring to a boil over high heat. Then reduce to low heat and simmer slowly. Midway, add salt, chicken essence, thirteen spices, oyster sauce, and soy sauce. Simmer for 1 hour.
- 6
All done, forgive me that my bowl isn't big enough.
- 7
You can eat now. The meat is stewed until very tender; with a gentle bite, the meat comes off. The best part is still the soup. I drank two big bowls of it.
