Coconut-Scented Thousand-Layer Water Chestnut Cake
Steamed layer by layer into translucent ribbons, this water chestnut cake alternates deep brown sugar and coconut milk tiers, delivering a glossy, bouncy, gently sweet chew.
Instructions
- 1

I bought this kind of water chestnut flour. Using a paper cup to measure, one packet of water chestnut flour exactly fills two cups.
- 2

Let's start with the red paste part: dissolve one cup of water chestnut flour in two cups of clean water, then strain and set aside.
- 3

Pour one cup of brown sugar and two cups of water into a small pot and dissolve.
- 4

After the brown sugar water boils, turn to low heat.
- 5

Scoop a spoonful of water chestnut starch slurry into the brown sugar water, stir quickly until the slurry becomes slightly thick, then immediately turn off the heat, and the brown sugar syrup is ready.
- 6

Pour the cooked brown sugar syrup into the water chestnut starch slurry and stir evenly.
- 7

Sift and set aside.
- 8

Now make the white liquid part: one can of coconut milk exactly fills two measuring cups.
- 9

Dissolve one cup of water chestnut flour in two cups of coconut milk, then sift and set aside.
- 10

Pour two cups of pure milk into a pot (you can also use two cups of water instead), add one cup of white sugar, and cook until the sugar melts. Reduce to low heat, scoop in a spoonful of water-dissolved water chestnut starch mixed with coconut milk, stir quickly until the starch mixture becomes slightly thick, then immediately turn off the heat. The milk starch mixture is ready.
- 11

Pour the cooked milk slurry into the water chestnut starch mixture that has been dissolved in coconut milk, stir well, and strain for later use.
- 12

In this way, the red liquid and white liquid are prepared.
- 13

Pour more clean water into a pot, and after it boils, place a large basin inside. Scoop in the white mixture, about 2.5 ladles per layer, steam for 3 minutes, then scoop in the red mixture, also steaming for about 3 minutes. Then just repeat a layer of the white mixture and a layer of the red mixture like this until it's fully steamed. Before scooping in the starch mixture, be sure to stir it first, because it will settle.
- 14

Make sure it has completely cooled before cutting!
- 15

The bouncy and smooth coconut-flavored water chestnut cake is ready! It's really so delicious that you can't stop eating.
