Cold Celery and Peanuts
Simmered peanuts soak in fragrant spice broth while crisp celery and carrot cubes are briefly blanched, the three mingling into a satisfying textural medley with mild savory notes.
Instructions
- 1
Wash the peanuts and pour them into a pot, add all the spices, Thirteen Spice Powder, light soy sauce, and salt, and cook until done. Add a little more salt than usual.
- 2
Keep the boiled peanuts soaking for another two hours to absorb the flavor.
- 3
Wash the carrots and celery and cut them into small cubes.
- 4
Put it in water to cook, tasting as it cooks, and don't cook it too soft.
- 5
Take it out and drain the water.
- 6
Add a little salt for seasoning.
- 7
Scoop out the peanuts and mix them together.
- 8
Add a little sesame oil and mix well; a small dish to go with drinks.
