Cold Cucumber with Vermicelli
Glassy vermicelli and shredded cucumber hide under sizzling oil poured over Sichuan peppercorns and aromatics, a fragrant, slurp-worthy chilled noodle dish.
Instructions
- 1

Prepare a batch of vermicelli and soak it in boiling water, making sure the water covers the vermicelli.
- 2

This way, wash a cucumber clean.
- 3

Rub the cucumber into threads and set aside, then finally pour it into the vermicelli plate.
- 4

Soak the vermicelli until soft, then remove and set aside.
- 5

Chop the ginger, garlic cloves, and scallions and set aside. Cut the millet into small pieces and set aside.
- 6

Add the appropriate amount of salt to the seasonings and set aside.
- 7

Heat the pan and add oil.
- 8

Put a few Sichuan peppercorns in the seasoning bowl (if possible, it’s better to use fresh Sichuan peppercorns), then pour hot oil over the seasonings.
- 9

Pour soy sauce and vinegar into a seasoning bowl, adjusting the amount according to your taste.
- 10

After mixing all the seasonings evenly, pour them into the plate containing vermicelli and cucumber.
- 11

Just mix it well, and it's ready—full of color, aroma, and flavor.
