Cold Dressed Black Fungus
Springy black fungus takes on bold flavor from sizzled Sichuan pepper oil poured over chili, garlic, and sesame before tossing.
Instructions
- 1
Prepare the ingredients: wood ear mushrooms (soaked in advance), cilantro, millet chili, garlic.
- 2
After the water boils, add the wood ear mushrooms and cook for 2 minutes.
- 3
After the wood ear mushrooms have been soaked in cold water, drain the excess water and set aside.
- 4
Heat the pan over low heat with Sichuan pepper oil, and stir-fry until fragrant.
- 5
Pour hot oil over the chili, minced garlic, and sesame (if you don't have Sichuan peppercorns, you can directly use sesame oil, but the flavor will be much better if you first infuse the oil with the peppercorns; the whole house will be filled with fragrance).
- 6
Prepare the sauce: light soy sauce, oyster sauce, vinegar, sugar, a pinch of salt, mix well.
- 7
Stir evenly.
- 8
The crispy and refreshing cold tossed wood ear mushrooms are ready.
- 9
You can put it in the refrigerator to chill, and the taste will be richer.
