Cold Dressed Cirsium
Wild thistle greens are blanched and squeezed dry, then tossed with mashed garlic and crushed peanuts. Mildly herbal with no off-flavor, it is a rustic dish best enjoyed in moderation.
Instructions
- 1

Stir-fried shepherd's purse, blanch it in boiling water, and squeeze out the water. Crush the garlic into a paste.
- 2

Put the prickly vegetable in the bowl.
- 3

Add minced garlic and salt.
- 4

Add crushed peanuts.
- 5

Add sesame oil and stir well.
- 6

Cirsium greens have no peculiar smell and taste quite good in cold dishes, but they shouldn't be eaten in large amounts as they are cooling in nature.
