Cold Dressed Fish Skin
Pre-cooked fish skin needs only a thirty-second warm dip before an ice bath locks in its bounce, after which a fiery garlic-chili dressing makes it sing.
Instructions
- 1

Prepare ginger, green onions, garlic, chili powder, chili flakes, and white sesame seeds.
- 2

Pour hot oil over it.
- 3

Add oyster sauce, light soy sauce, and chilled vinegar, and set aside.
- 4

Clean the fish skin, cut it into smaller pieces to absorb the flavor better, and set aside.
- 5

Because the fish skin is already cooked, you only need warm water. Put it in the pot and blanch for about 30 seconds. Don't cook for too long—the key to a chewy and springy texture is to take it out and rinse it with cold water.
- 6

Add the sauce that was just prepared.
- 7

Just mix evenly, finished product photo.
