Cold Dressed Fried Purple Eggplant
Purple eggplant rounds are dry-griddled in a cast-iron pan with no oil at all, keeping the flesh light and pure, ready for dressing to taste.
Instructions
- 1

Remove the stem from the eggplant, wash it, and set it aside.
- 2

Cut into round slices about eight millimeters thick.
- 3

Put it into the frying pan.
- 4

Cook the purple eggplant over low heat. I am using a relatively thick cast-iron pan without any oil; a non-stick pan is best. While cooking, continuously press the surface of the eggplant slices with a spatula until they reach your preferred level of doneness. If you like them soft, cook them a little longer; if you prefer the slightly undercooked taste of eggplant, cook them a little less.
- 5

Flip it over and cook until both sides are golden brown.
- 6

Put the roasted eggplants into a bowl and let them cool.
- 7

Pound the garlic into a paste and set aside.
- 8

Cut into strips.
- 9

Put it into the basin.
- 10

Pour on the mashed garlic, and drip a few drops of sesame oil.
- 11

Just mix evenly.
- 12

Ready to serve.
- 13

Tasty, goes well with rice.
