Cold Dressed Pickled Cabbage with Peanuts
Simmered peanuts, cooled and still tender, are folded through sliced tangy kimchi with a light soy-sesame dressing for a satisfying cold side.
Instructions
- 1

Soak the peanuts in water for 1 hour.
- 2

Put the soaked peanuts, star anise, chopped green onions, and sliced ginger into the pot, cook over medium heat for 10 minutes, and add a little salt before taking it out.
- 3

Rinse the homemade kimchi with clean water and squeeze it dry;
- 4

Cut the kimchi into slices;
- 5

Scoop out the cooked peanuts and let them cool for later use;
- 6

Mix the peanuts with the chopped pickles, then add a little chicken bouillon, light soy sauce, sugar, sesame oil, and chopped green onions. It's a very tasty side dish that goes well with rice, with a moderate sweet and sour flavor.
