Cold Dressed Potato Slices
Potatoes are cut into even slices, blanched with a splash of vinegar for snap, and coated in a cumin-spiked chili dressing. Crisp-tender, smoky, and addictive for spice lovers.
Instructions
- 1
Prepare a potato.
- 2
Cut into thin slices of uniform thickness.
- 3
Blanch in boiling water and add a little white vinegar; this will make the potato slices crisper. Depending on the thickness you cut, blanch for another 1-2 minutes after the water boils, then remove and put them in cold water to cool, and finally drain the water.
- 4
Put chopped green onions, sesame seeds, small chili peppers, and cumin powder in a bowl, add an appropriate amount of hot oil to bring out the aroma. Friends who can eat spicy food can add some chili powder as well.
- 5
Then add oyster sauce, vinegar, light soy sauce, sugar, salt, and chicken bouillon, then drizzle a little sesame oil or Sichuan pepper oil.
- 6
Pour the sauce over the potato slices, sprinkle with cilantro, and mix evenly.
- 7
Plate it up and start eating!
