Cold Dressed Purslane
Wild purslane greens are briefly blanched, soaked to mellow their tang, and dressed with minced garlic, ginger, and fresh chili finished with a sizzle of hot oil.
Instructions
- 1

Clean and set aside half a cat's tongue herb.
- 2

Boil water in a pot, add the cleaned ice plant to the pot for two minutes, and stir evenly up and down.
- 3

Pour the boiling water together with the purslane into a bowl and soak for ten minutes.
- 4

Place the soaked ice plant onto a plate.
- 5

While soaking the purslane, prepare minced garlic and ginger, chop them appropriately, and cut a small millet grain and set it aside with some salt.
- 6

Heat oil in a pan and pour it into a bowl, then add an appropriate amount of light soy sauce and vinegar (a bit more than the soy sauce) into the bowl and set aside.
- 7

Pour the prepared seasoning into the plate of Purslane.
- 8

Stir well, and the tangy, appetite-stimulating purslane is ready to eat.
