Cold Marinated Chicken Feet
Poached chicken feet are chilled and mixed with a savory sauce, served alongside curled cucumber ribbons and fresh mint for contrast.
Instructions
- 1

Wash the chicken feet repeatedly, then soak them in clean water.
- 2

Add various seasonings, scallions, ginger, and salt to the chicken feet in the pot.
- 3

Boil for 10 minutes, then remove and cool.
- 4

Wash the cucumber.
- 5

Use a scraper to shave the cucumber into slices.
- 6

Roll them separately as shown in the picture.
- 7

Pour the sauce over the chicken feet and mix evenly (add in batches).
- 8

Mix the chicken feet evenly to absorb the flavors.
- 9

Place the mixed chicken feet in the center of the plate, then pick 2 home-grown mint leaves to garnish; the presentation is novel, and it is chewy and refreshing.
