Cold Mixed Abalone Slices
Simmered abalone is sliced thin and briefly iced for extra springiness, then dressed cold, a luxurious yet simple seafood salad highlighting the mollusk's naturally sweet bite.
Instructions
- 1

After cleaning the abalone, use a spoon to scoop out the abalone meat and remove the internal organs.
- 2

Clean it again, and then take a pot to boil water. Once it boils, put the abalone meat in and cook for about 5 minutes. I chose Fujian-style abalone that has already been partially cooked and frozen to 80% doneness, which only needs to be heated for 3-5 minutes before eating, making it convenient and quick.
- 3

After cooking, place the abalone meat in ice water and chill for a few minutes to make the meat firmer. Slice the chilled abalone meat for later use.
- 4

Wash the other vegetables, shred the cucumber, cut the cilantro into sections, slice the small chili peppers into rings, smash and cut the garlic into pieces, and briefly blanch the pea shoots in boiling water for a few minutes.

Take a larger bowl, put all the ingredients in it, add soy sauce, spicy seasoning, salt, and oil, and mix everything evenly. It’s ready to serve.
