Cold noodles
Refreshing chilled noodles tossed with garden mint, perilla and garlic, paired with blanched greens and a savory soybean-paste dressing for an herby, cooling summer meal.
Instructions
- 1

Clean and chop the mint and perilla. You don't have to use them if you don't have them; I grow them on the rooftop and can't help but pick them when I see them.
- 2

Prepare some garlic.
- 3

Boil a pot of water, and when the water is about to boil, add the noodles and cook until done.
- 4

Take the cooked noodles out and put them in cold boiled water.
- 5

Keep boiling the water for the noodles, and blanch the greens in it until cooked.
- 6

The blanched vegetables are also added to the bowl of noodles.
- 7

Heat oil in a pan, add garlic and stir-fry until fragrant.
- 8

Add a spoonful of soybean paste.
- 9

Add a little soy sauce and stir-fry until fragrant.
- 10

Turn off the heat and immediately add the shiso and mint, mixing well.
- 11

Pour the noodles into the pot. It's easy to mix in the pot.
- 12

Mix well and then scoop it out.
