Cold Sesame Spinach

Cold Sesame Spinach

A longer blanch tames the oxalic bite of fresh spinach, which is then loosened into bundles seasoned with sesame oil and a whisper of sugar.

Instructions

  1. 1
    Step image

Fresh spinach, remove the roots, wash clean and set aside.

  2. 2
    Step image

Boil a pot of water, and blanch the spinach for 1 minute. Because spinach contains oxalic acid, it needs to be blanched a little longer than other green vegetables to remove the oxalic acid.

  3. 3
    Step image

Blanch the spinach in water, then soak it in cold water to cool.

  4. 4
    Step image

Squeeze the water out of the spinach and put it into a storage box.

  5. 5
    Step image

Fluff the spinach, then add salt, sugar, a tiny bit of mushroom seasoning (or chicken bouillon), sesame oil, and toasted white sesame seeds, and mix well.

After mixing evenly, the cold sesame spinach is ready. Just put it in the refrigerator to chill.
