Cold Tossed Cucumber and Wood Ear Mushrooms
Smashed cucumber, glossy wood ear and sweet onion shreds come together in a sharp, garlicky dressing. A beloved cold classic that pairs well with any noodle or rice.
Instructions
- 1

Soak the dried black fungus in water for 5 minutes, then wash it clean and drain the water. Set it aside for later use. Be sure not to soak it for too long, otherwise it can be toxic.
- 2

Put the sliced ginger and smashed cucumber aside for later.
- 3

Cut the onion into thin strips and wash them in clear water to remove the pungency. Rub them with your hands while washing, and change the water several times to reduce the sharp taste. After washing, take them out and drain the water.
- 4

Put the wood ear mushrooms into boiling water prepared in advance and blanch for 5-8 minutes. Then remove them and briefly rinse with cold boiled water. Drain and set aside.
- 5

Put the smashed cucumbers, wood ear mushrooms, shredded onions, and shredded ginger into a bowl, and sprinkle with an appropriate amount of oil, soy sauce, salt, sugar, vinegar, and some sesame oil.
- 6

Put on disposable gloves and mix evenly, then you can plate it.
