Cold Tossed Edamame
Trimmed edamame pods boil briefly with salt and oil, then bathe in raw garlic and a sizzling splash of hot oil over soy sauce for maximum aroma.
Instructions
- 1

Trim both ends of the edamame to help it absorb flavor, and rinse it clean in water with a small spoon of salt, then set aside.
- 2

Add water and salt to the pot. When the water boils, add the edamame and a little oil, and cook for 5 minutes. Do not cook until too soft.
- 3

Scoop out with cold water and place on a plate.
- 4

Chop the garlic into garlic paste, place it on the edamame, and pour in light soy sauce (steamed fish soy sauce also works).
- 5

Heat the oil in the pan until it starts to smoke.
- 6

Pour hot oil over the mashed garlic and stir well. Taste it first, and if it’s not salty enough, add some salt, then you can start eating.
