Cold Tossed Shepherd's Purse
Wild shepherd's purse is blanched and minced, then folded with sweet shrimp and a garlicky soy-vinegar dressing. Earthy greens meet springy seafood in this rustic countryside starter.
Instructions
- 1
Blanch shepherd's purse until cooked, chop finely, cook the shrimp at the base, remove the shells, and dice them
- 2
Put crushed garlic and chopped green onions in a small bowl, drizzle with hot oil, add soy sauce, vinegar, and sugar, then mix well.
- 3

Slightly squeeze out some of the water from the chopped Shepherd's Purse, add the diced shrimp, mix evenly with the sauce, and serve on a plate!
