Colorful shrimp dumplings
Playful multicolored dumplings pairing hot- and cold-water doughs tinted with food coloring, wrapped around a juicy filling of minced pork, chives and chunky shrimp.
Instructions
- 1

Wash the chives and chop them finely.
- 2

Wash the shrimp and cut them into large pieces.
- 3

The minced meat was ground earlier and taken out in advance to thaw properly.
- 4

First mix the minced meat, add salt, oyster sauce, chicken essence, and thirteen-spice seasoning into the meat. Pour hot oil over it, add soy sauce and stir, then add chives and shrimp, and it's ready.
- 5

Use hot water to knead the glutinous rice flour, and cold water to knead the regular flour.
- 6

Colored ones need to be made using trial pigments. I used red. You can also use colored fruit juice and dough.
- 7

After kneading the dough, it needs to rest for about 20 minutes, which coincides perfectly with the preparation of the filling.
- 8

The dumplings need to be slightly larger than boiled dumplings, but not too big. After wrapping, place them in the steamer and steam for about 15 minutes.
- 9

I wrapped two kinds; this one is not colored.
- 10

The colors are quite pretty. Time to eat. Kids like it! Next time I'll try vegetable juice and noodles.
