Condensed milk bun, full of milky fragrance, can be eaten by tearing it apart, soft, rich, and chewy.
Condensed milk bun — egg, condensed milk and yeast, baked until golden and fragrant.
Instructions
- 1

Put 1 egg, 60 grams of condensed milk, 3 grams of yeast, and 140 grams of milk together, and stir evenly until emulsified.
- 2

Sift in 280 grams of bread flour and 20 grams of milk powder, then add 2 grams of salt.
- 3

After mixing evenly, knead into a dough with no dry powder.
- 4

Cover with plastic wrap and let it rest for 30 minutes.
- 5

Take out the relaxed dough, spread it out, and place 30 grams of unsalted butter that has fully softened at room temperature on top.
- 6

Knead by hand until the butter is completely incorporated into the dough, kneading until a slightly thin film appears.
- 7

Cover with plastic wrap and let it ferment until it doubles in size.
- 8

For the fermented dough, dust your finger with some flour and insert it into the center. If the dough does not shrink back or collapse, it is properly fermented.
- 9

Take out the dough, press to release the air, and divide it evenly into 6 pieces.
- 10

After rolling each one into a ball, wrap it in plastic wrap and let it rest for 15 minutes.
- 11

Take a piece of dough and first roll it into the shape of a cow's tongue, with a length about the same as the mold.
- 12

Roll it out into a square shape again.
- 13

Flatten the edge on one side.
- 14

Then tightly roll it up from the flattened part upward.
- 15

Place a sheet of baking paper at the bottom of the mold and arrange the shaped dough inside. Do not turn on the oven; put the dough in to ferment until it is 1.5 to 2 times larger. (Note: You can put a bowl of hot water inside to maintain humidity and temperature, which helps with fermentation.)
- 16

Take out the fermented dough and brush a layer of egg wash on the surface.
- 17

Preheat the oven to 170°C, put it in and bake for about 20 minutes. Once the surface starts to brown, cover it with a piece of aluminum foil to prevent the surface from getting too burnt.
- 18

Take it out of the oven and place it on a cooling rack to cool.
- 19
