Congee Side Dish ~ Exclusively Pickled Young Ginger in Vinegar
Tender young ginger slices sleep in rock-sweetened rice vinegar, keeping their pale blush and crisp bite for whenever a mellow, faintly sweet zing is wanted beside congee.
Instructions
- 1

Clean the young ginger, then wipe it dry or drain the water.
- 2

Rock sugar, appropriate amount.
- 3

Zijiang, sliced.
- 4

Place it into a clean, oil-free container, and add an appropriate amount of rock sugar.
- 5

Rice vinegar brewed from grains.
- 6

Dong dong dong dong, pour in rice vinegar 😀 until it covers the ginger slices, seal the lid, and store in the refrigerator. Take as needed, using oil-free chopsticks 😅. Slightly sour with a sweet aftertaste, and the young ginger is crisp and tender.
