Cooked Chinese pear
Whole birchleaf pears simmered with red chili and salt until the skins just crack; an unusual sweet-savory treatment yielding tender fruit with a salty-spicy edge.
Instructions
- 1

Wash the Chinese pear clean.
- 2

Prepare some chili peppers, preferably red ones as they are more appetizing. I don't have bright red ones, so I used ones soaked in soy sauce.
- 3

Put it into the pot, add some water, enough to just cover the fruit.
- 4

Add some salt after it boils; you can add more, after all, it's hard for the flavor to penetrate.
- 5

Continue cooking, making sure to turn them over, and cook until some start to crack. I overcooked a few, and when the cracks got big, they became soft.
- 6

After pouring out the water, add some sugar and chili, and mix well.
- 7

You can add more salt or sugar, like the kind of cooked pickled vegetables sold at street stalls that are coated with a thick layer of white salt.
