Cornmeal steamed bun
Rustic steamed buns combining hot-water-scalded cornmeal with wheat flour, eggs and a touch of lard for richness; fermented until airy, they steam up pillowy with a subtle corn sweetness.
Instructions
- 1

Use 120 grams of boiling water to scald the cornmeal.
- 2

Stir evenly.
- 3

Add sugar, and stir evenly again.
- 4

Crack in two eggs.
- 5

Add 350 grams of flour.
- 6

5 grams of yeast.
- 7

Stir until there are large clumps.
- 8

Add 15 grams of lard, and stir evenly again.
- 9

Knead by hand into a smooth dough.
- 10

Cut into evenly sized small portions (about 70 grams each).
- 11

Form into circles separately.
- 12

Place in a steamer, leaving a gap in the middle, cover with the lid, and let it ferment in a warm place until it doubles in size (the temperature is high now, about 40 minutes).
- 13

Place the well-fermented steamed buns into the steamer with cold water, steam for 12–15 minutes after it starts emitting steam, then steam for another 3 minutes with the lid slightly open, and they are ready.

It's done cooking.
- 15

Fluffy and soft, with a delicate texture.
