Country-style Pork Rib Soup
A rustic slow-simmered soup of blanched pork ribs, sweet corn, and carrot stewed with ginger, scallion, and a splash of vinegar until the broth turns clear, sweet, and nourishing.
Instructions
- 1

Raw material image.
- 2

Clean the ribs and first put them in a pot to blanch.
- 3

Cut the corn and carrots into small pieces.
- 4

Take out the parboiled ribs and set aside.
- 5

Put the ribs, corn, and carrots into an electric stew pot, add boiling water (cold water is also okay), add an appropriate amount of tied green onions and ginger, add a spoonful of cooking wine, a few drops of vinegar, and stew on high heat.
- 6

Depending on the stew pot, the cooking time varies. I add boiling water, and generally stewing for 1.5 hours before adjusting the salt is fine.

If you can't finish it, you can put it in an airtight container and freeze it in the fridge. When you don't feel like making soup, take it out, thaw it, and boil it, and you'll have soup again.
