Crab Meat Tofu Soup
A smooth, savory crab and tofu soup with green peas and carrot, thickened with potato starch and finished with a fragrant scallion oil.
Instructions
- 1

Thaw the frozen crab meat, rinse it with water, squeeze out the water, and mix with cooking wine to remove the fishy smell.
- 2

Cut the soft tofu into small cubes.
- 3

Rinse the green peas and carrot cubes with water.
- 4

Mix a teaspoon of cornstarch with 3 tablespoons of water.
- 5

Heat oil in a pan and sauté the white parts of the scallions until fragrant.
- 6

Put the crab meat in and stir-fry it.
- 7

Pour in 500ml of water and bring to a boil. (You can use broth if you have it.)
- 8

Add the tofu, green peas, and diced carrots and cook for about 2 minutes.
- 9

Add salt and chicken powder for seasoning. (If you use broth, you don't need them.)
- 10

Slowly pour in the cornstarch water to thicken the sauce, and it's ready. (While pouring in the cornstarch water, gently stir until it reaches your preferred thickness.)
- 11

Fresh, tender, and smooth. Sprinkle white pepper powder when eating to add flavor while warming the stomach.
