Crab Roe and Shrimp Tofu Casserole
A clever casserole where steamed mashed salted egg yolks mimic crab roe, coating silken tofu cubes and marinated shrimp in a rich, savory, golden claypot sauce.
Instructions
- 1

Clean the shrimp, add pepper and cooking wine, mix well, and marinate for 10 minutes.
- 2

Wash the salted duck eggs, take three egg yolks (one of which is a double-yolked egg) and one egg white. Place them separately in bowls and steam in a pot for 8 minutes.
- 3

Finely chop the steamed salted egg white.
- 4

Steam the salted egg yolks and mash them.
- 5

Wash the soft tofu and cut it into pieces.
- 6

Heat the clay pot, pour in oil, and add ginger slices to stir-fry until fragrant.
- 7

Add the salted egg yolk and stir-fry, crushing it with a spatula as you cook.
- 8

Stir-fry until the salted egg yolks release oil.
- 9

Add an appropriate amount of cooking wine and boiling water.
- 10

Add the soft tofu and crumbled salted egg whites, gently stir to mix, cover, and simmer on low heat for 5 minutes.
- 11

Add a small amount of green peas and shrimp, then cover and simmer over low heat for 5 minutes.
- 12

After turning off the heat, sprinkle in the chopped green onions.
