Crisp Lettuce Sticks (Third Way to Eat Lettuce)
The third variation in a trio of lettuce-stem recipes, these salt-cured sticks dry briefly in the sun before meeting a fragrant brine of bird's-eye chilies, ginger, garlic and rock sugar.
Instructions
- 1

The lettuce stem is as thick as a finger and is small in size.
- 2

Salt and marinate for a few hours, using bending as the standard. Rinse the marinated bamboo shoots several times with cold water, then put them in the sun to dry for two hours, turning them over occasionally.
- 3

After drying off the moisture, add millet chili, ginger, garlic, and rock sugar.
- 4

Mix evenly and place into a marinating container, which must be free of water and oil.
- 5

Mix the liquid and solid ingredients and bring to a boil, then turn off the heat and let it cool.
- 6

Pour into a container, marinate overnight, and it's ready to eat. Do not discard this marinade. You can continue to use it when adding other ingredients.
