Crispy almond jam-filled cookies, in the name of love, healing life with sweetness and happiness
Crispy almond jam-filled cookies: low-gluten flour, granulated sugar and salt in a few quick steps, baked until the surface of the cookies is golden. A great choice for family gatherings or a weekend treat.
Instructions
- 1

Butter softened to room temperature. Beat 1 egg into liquid, then mix with 300g of cake flour, 30g of granulated sugar, 6g of salt, and 150g of softened butter.
- 2

Add one egg and stir into a mass, then add 15ml of water to increase the stickiness.
- 3

Spread the dough evenly on the bottom of the mold and press it flat, with the edges slightly higher to prevent the jam's heated sugar from sticking to the mold.
- 4

Pour in 120g of cherry jam and spread it evenly.
- 5

Mix 120g of butter with 120g of almond paste until smooth, then add 100g of fine granulated sugar and mix well.
- 6

Add two eggs and continue to mix evenly. Add 250g of low-gluten flour and 2g of baking powder, and stir until there is no dry flour.
- 7

Fill a piping bag with almond paste and evenly pipe it onto the surface of the jam.
- 8

Preheat the oven to 170°C, place the mold in the middle layer of the oven, and bake for about 30 minutes until the surface of the cookies is golden.
- 9

Remove from cooling and molding, then cut into pieces to serve.
