Crispy Lettuce with Sauce
Thin slices of lettuce are salted to draw out moisture, then steeped in a soy sauce and vinegar brine until irresistibly crunchy. A refreshing pickle that pairs well with plain rice.
Instructions
- 1

Peel the lettuce and cut it into thin slices
- 2

Put it into a bowl and sprinkle five grams of salt.
- 3

Shake well
- 4

Place in a container that can leak water, let it sit for 2 hours, allowing it to dehydrate and absorb the flavor
- 5

Pour boiling water over the lettuce to rinse off excess salt.
- 6

Put the lettuce slices into the glass jar
- 7

Pour in the seafood soy sauce until the lettuce slices are just submerged, add 3 tablespoons of white vinegar, cover with a lid, and let it sit for more than 5 hours.
