Crispy pickles
Pressed cucumber spears meet a fragrant mix of soy sauce, vinegar, sugar, and honey with plenty of ginger and garlic, staying remarkably crunchy.
Instructions
- 1
Wash the cucumber and green pepper. Cut the cucumber into strips and the green pepper into chunks.
- 2
Add three spoons of salt and marinate for half a day.
- 3
Rinse off the excess salt with cool boiled water and squeeze out the water. If you want it to be a bit crisper and drier, you can place the cucumbers in a colander and press them with a basin full of water overnight.
- 4
Slice the ginger and garlic, and put them into a bowl.
- 5
Add two tablespoons of light soy sauce and one tablespoon of dark soy sauce.
- 6
Half a spoon of fragrant vinegar. You can also leave it out.
- 7
A spoon of sugar.
- 8
A spoonful of honey.
- 9
Toss the cucumber strips evenly and marinate for two days until they are infused with the flavor of the sauce.
- 10
Finished product. It can be stored in a glass jar in the refrigerator. If the sauce has not turned sour, it can be boiled and cooled, and then used again to pickle vegetables.
- 11
Finished product. Crisp and refreshing in taste.
