Crispy Sesame Balls
Chewy glutinous rice dough balls rolled in sesame and deep-fried low and slow so they puff hollow, forming a crackly, nutty crust around a tender, sweet crumb.
Instructions
- 1

Measure the white sugar properly.
- 2

Pour boiling water over the white sugar to make it completely dissolve.
- 3

After letting it cool to a warm temperature, add the glutinous rice flour and leavening agent into the sugar, then mix evenly with chopsticks.
- 4

Knead the glutinous rice dough evenly and divide it into uniform portions.
- 5

Covered thickly with sesame seeds.
- 6

Lower the sesame dough pieces into the oil and fry slowly over low heat without exceeding 130 degrees.
- 7

The first batch of sesame balls floated and puffed up after being placed in the oil, then four more were added to continue frying.
- 8

The fried sesame balls are crispy, sweet, and fragrant, with a strong sesame aroma that is especially delicious.
