Crispy, tender, and refreshing --- Sweet and Sour Young Ginger
Tender young ginger slices are salted, squeezed dry and chilled in a sweet-tart vinegar syrup, becoming a pale pink palate refresher served before meals.
Instructions
- 1

Wash the young ginger and let the surface moisture air dry naturally, then slice it into thin pieces.
- 2

Add a little salt to the young ginger, mix well, and marinate for 30 minutes.
- 3

Pour the white sugar into the rice and mix evenly.
- 4

Squeeze the moisture out of the young ginger, place it in an airtight container without oil or water, and pour in the sweet and sour sauce to mix evenly; seal the container and refrigerate for more than half a day before serving.
