Crucian Carp and Tofu Soup — Nutritious Delicacy
A classic nourishing soup where crucian carp is pan-fried until golden, then simmered with silken tofu until the broth turns creamy white, prized for its milky richness and lactation-boosting reputation.
Instructions
- 1

Prepare the ingredients and seasonings.
- 2

Make two cuts on each side of the crucian carp, add an appropriate amount of cooking wine, and marinate with ginger slices for about 15 minutes.
- 3

A box of silken tofu, cut into thin slices. Silken tofu is easy to break, so it's best to cut it on a flat plate, making it easier to put into the pot (personally, I prefer silken tofu, but you can also use regular tofu).
- 4

Heat oil in a hot pan until it reaches about 70% of its maximum heat.
- 5

Add the crucian carp, pan-fry both sides, then add the garlic cloves and sauté to release the flavor.
- 6

Add a pot of boiling water, preferably enough to cover the fish, then add the cut tofu, a suitable amount of cooking wine, bring to a boil, then reduce to low heat and simmer for 10 minutes. Before serving, add an appropriate amount of salt, MSG, and white pepper powder.
- 7

As the crucian carp and tofu stew cooks longer, the soup becomes increasingly white, eventually turning milky white, and is very delicious and tasty! After serving, just sprinkle with chopped green onions. I didn't add coriander because I didn't have any.
