Cucumber Mixed with Cold Noodles - Exclusive
Silky pea-starch jelly is chilled until firm, then cubed and combined with cool cucumber for a smooth, wobbly texture contrast. A classic chilled summer appetizer.
Instructions
- 1

Mix pea starch with 200 grams of cold water until well combined.
- 2

Bring non-stick water to a boil in a pan, then pour in the starch slurry while stirring continuously.
- 3

Stir until the starch paste becomes transparent, then turn off the heat. Continue stirring for 1 minute before pouring it into a bowl. Use the water bath method to cool with cold water.
- 4

Once the temperature drops, refrigerate until the liangfen sets firmly. Cut into small pieces.
- 5

Peel the cucumber and cut it into small pieces, then place them on a plate.
- 6

Place the cold jelly on the cucumber, mix minced garlic, soy sauce, vinegar, and sesame oil into a dressing and pour it over the plate, then finally add a little chili oil.
- 7
