Cucumber pickles
Cucumber strips are salted to draw out moisture, then kept crisp for a light, refreshing side that pairs well with congee or rice.
Instructions
- 1

Wash the cucumber, pat it dry with kitchen paper, and set aside.
- 2

Cut the cucumber into sections according to your needs, and peel the garlic cloves for later use.
- 3

Cut the cucumber into strips, then cut each segment into six equal parts, removing the cucumber core. Slice the garlic cloves.
- 4

Place the cut cucumber sections into a container without water or oil, sprinkle with salt, and marinate for 10 minutes.
- 5

During the pickling process, you need to turn it several times to allow the salt to fully penetrate.
- 6

After marinating, pour out the brine and use kitchen paper to absorb the excess water. Add sugar, sliced garlic, fresh chili segments, and Supreme Soy Sauce.
- 7

Stir evenly.
- 8

Cover with plastic wrap and put it in the refrigerator; it can be plated and used tomorrow morning. You can also put it in a storage container and store it in the refrigerator.
- 9

Plated finished product!
- 10

Can be paired with any breakfast!
