Curry rice
Comforting Japanese curry with chicken breast, potato, carrot, and onion simmered until tender, then thickened with curry roux into a mild, glossy sauce served over rice.
Instructions
- 1

Peel the potatoes and cut them into pieces. Cut the carrots, onions, and chicken breast into pieces and set aside. Heat oil in a wok, then add the carrots and stir-fry for a while.
- 2

Add the potatoes and onions and stir-fry evenly.
- 3

Continue adding the chicken breast and stir-fry until the chicken changes color.
- 4

Pour in water until it just covers the ingredients, bring to a boil over high heat, skim off the foam, and simmer over medium-low heat for 8 minutes.
- 5

Add the curry blocks, stir until the curry blocks are melted, bring to a boil, then reduce to low heat and simmer.
- 6

Be careful to stir to prevent sticking to the pot, and turn off the heat once the sauce has thickened.
- 7

Prepare an appropriate amount of rice.
- 8

Just pour the cooked curry on top.
