Dandelion's Exclusive Plain Dumplings
Vegetarian dumplings celebrating backyard dandelion greens, blanched to mellow their bitterness and folded with shiitake and scrambled egg, minimally seasoned to let the springy, herbal flavor shine.
Instructions
- 1

Green dandelions I dug myself in the garden, about one pound.
- 2

After cleaning thoroughly, blanch in boiling water briefly, then put in cold water to remove the bitterness, and finally squeeze out the water.
- 3

Rinse the dumpling wrappers with cold water in advance.
- 4

Shiitake mushrooms are also blanched, and most of them also have a chive flavor.
- 5

Scramble the eggs until they are broken up.
- 6

Filling
- 7

Add salt, no other seasonings are added, mainly to showcase the original flavor of the ingredients.
- 8

Knead the dough, saving an hour, because the heating was turned off and the room is slightly cool.
- 9

A total of fifty-one were wrapped.
