Debut at the center of the summer dining table, a bowl of sweet and sour pork trotters
Pig trotters stew for an hour and a half with Zhenjiang vinegar and rock sugar until the skin turns jelly-like and the sauce clings like lacquer. Tangy, sweet, and collagen-rich, they offer the ultimate glossy indulgence.
