Deep-fried dough sticks
Classic Chinese youtiao made from an overnight-refrigerated leavened dough stretched into strips, paired, and deep-fried in hot oil until dramatically puffed, golden, and crisp outside yet chewy within.
Instructions
- 1

Knead the dough for the fried dough sticks into a lump.
- 2

Wrap it with plastic wrap and refrigerate for 8 hours, then take it out and let it return to room temperature.
- 3

The dough does not need to be kneaded again; simply shape it into a long strip.
- 4

Apply a bit of water in the middle before overlapping the two pieces, then press a line from the center.
- 5

Heat the oil in the pan to about 50% hot, then add the smallest youtiao to test fry.
- 6

Because there isn't much oil in the pan, only one piece of youtiao dough can be fried at a time.
- 7

Fry each one until done, then remove from the pan.
