Delicious Bamboo Fungus Chicken Soup
A nourishing chicken soup of blanched chicken pieces slow-simmered with ginger and scallion, enriched with delicate bamboo fungus that drinks up the savory golden broth.
Instructions
- 1

This is a whole chicken.
- 2

Take a portion and wash it with blood water, then set aside.
- 3

Place the cleaned chicken pieces into the pot, and pour in cold water.
- 4

Bring to a boil, then pour it out, and drain the chicken pieces.
- 5

Drain the chicken pieces and put them back into the pot, and the pot will clean itself. 😁
- 6

Pour in boiling water, then add some ginger and scallions. When blanching, also add a little ginger and scallions.
- 7

Cleaned it, carved a flower 🙄 anyway I tried my best. Turns out I'm really clumsy with my hands.
- 8

Soak goji berries in advance
- 9

Add the goji berries and shiitake mushrooms, and cook.
- 10

I am using dried bamboo fungus.
- 11

Half an hour before taking it off the stove, soak the bamboo fungus about 10 minutes in advance.
- 12

Clean state. PS: Before soaking, it's best to remove the net-like covering on the bamboo fungus. It's easier if soaked directly, just needs to be washed several times, and cut off any closed parts at the root.
- 13

Add the bamboo fungus.
- 14

Before taking it off the heat, remove the scallion leaves used for making the soup, add some fresh chopped scallions, and just add a little salt.
- 15

Very fresh.
