Donkey rolling
A classic Beijing snack of steamed glutinous rice dough rolled around sweet red bean paste and coated in toasted soybean flour, yielding a soft, nutty, chewy bite.
Instructions
- 1
Soak the red beans overnight in advance, then cook them until tender. Add brown sugar and cook until the red beans are soft and broken down, with no liquid.
- 2
After it cools, mash it with a spoon.
- 3
An appropriate amount of glutinous rice flour.
- 4
Knead into a dough after adding warm water.
- 5
Brush the plate with oil evenly, then spread the dough flat on the plate, cover with a layer of plastic wrap, and steam it. After the water boils, cook on high heat for seven to eight minutes, then reduce to low heat, for a total of twenty minutes.
- 6
Roast the soybean powder.
- 7
Roll out the steamed dough and grease the cutting board with oil.
- 8
Spread red beans on top, leaving a little edge without red beans.
- 9
Roll it up.
- 10
Sprinkle with roasted soybean powder and it can be eaten.
- 11
The bean aroma is rich and very delicious. I forgot to take a photo of the plating, probably because I was too focused on eating.
