“Donkey Rolling” is a traditional specialty snack unique to the Old Beijing area
A beloved Old Beijing snack of steamed glutinous rice rolls spread with red bean paste, showered in toasted, fragrant soybean flour, delivering a soft, chewy, nutty-sweet bite.
Instructions
- 1

Most of what is bought in the market is raw soybean powder. You need to roast it yourself over medium heat, stirring constantly, until it becomes fragrant. Turn off the heat, let it cool, and add an appropriate amount of sugar.
- 2

100 grams of glutinous rice flour ➕ 150 grams of water. Find a shallow container and line it with plastic wrap, then brush with oil. Then pour the glutinous rice flour paste, mixed evenly into a slurry, into the container. My container is quite thin, so it was cooked after steaming for 13 minutes. Adjust according to your own equipment.

Add more red bean paste, about half a bowl. Mine wasn't enough, so add some more!
- 4

Spread the roasted, cooled bean powder mixed with sugar, and directly place the steamed glutinous rice on top.
- 5

Sprinkle some bean powder on top. I put a bit too much, which affects spreading the red bean paste. Less would be better.
- 6

The rod is thin, quite glutinous, and feels especially great to the touch!
- 7

Spread red bean paste and start rolling
- 8

Roll it up, cut it into pieces, and plate it!

Quite a successful attempt! Thanks for watching! It's been a long time since I shared a recipe, been a bit busy, but my cooking skills have improved a lot. I'll share when I have time! Very glad to meet everyone!
