Dragon and Phoenix Soup (Chicken Soup Stewed with Snake Meat)
A traditional Cantonese tonic soup stewing snake and chicken with red dates, goji, and astragalus for a rich, deeply fortifying broth.
Instructions
- 1

Mother Green Snake (that's what people in southern Fujian call her)
- 2

Half a chicken
- 3

Prepare the ingredients: green onions, red dates, goji berries, astragalus.
- 4

Boil water, blanch the chicken pieces to remove the foam, then take them out and rinse.
- 5

Blanched chicken pieces should be set aside.
- 6

Also pour boiling water over the snake meat, then take it out and wash it clean.
- 7

Fry the snake that has been washed in boiling water and set aside.
- 8

Cut the ginger into slices and shreds
- 9

Cold oil in a hot pan, heat the oil and sauté the shredded ginger until fragrant.
- 10

Then add the snake meat and stir-fry
- 11

Add water and bring to a boil, then pour into the pressure cooker.
- 12

Then put the chicken into the pressure cooker, along with the tied green onions, red dates, Huang's slices, and ginger slices. Cover and pressure cook for 10 minutes, then turn off the heat and let it sit for half an hour. You can open the pressure cooker lid and add goji berries. (You can also pour it into a clay pot to simmer for one hour over low heat)
- 13

Remove from the heat, season with salt, and it's ready.
