Dried Bonito Winter Melon Duck Soup
A classic Cantonese summer soup combining duck, dried bonito, winter melon, and aged tangerine peel, slow-simmered two hours into a cooling, savory, umami-rich broth.
Instructions
- 1

Chop the duck open and clean all the ingredients. Soak the coix seeds briefly.
- 2

Put ginger and cooking wine into cold water, blanch the duck and pork together, then wash clean after blanching and set aside.
- 3

Lightly soak the dried bonito, tear it apart and set aside, cut the winter melon into large pieces, and remove the pith from the dried tangerine peel.
- 4

Put the dried tangerine peel into cold water.
- 5

After bringing the water to a boil, add all the ingredients, boil vigorously for 15 minutes, then simmer on low heat for 2 hours. Add salt before drinking. Adjust the time accordingly if using a high-speed cooker or pressure cooker.
