Dried cherries and candied cherries

Dried cherries and candied cherries

Frozen cherries simmered in their own juices with a touch of rock sugar until thick and jammy, then dried into chewy, intensely fruity, ruby-hued homemade dried fruit.

Instructions

  1. 1

Wash the cherries and remove the stems.

  2. 2

Leave it in the freezer for half a day.

  3. 3

Put it directly into the pot to cook. Since it was frozen, it releases water quickly, and no extra water is needed. If the cherries are a bit sour, you can add some rock sugar.

  4. 4

    Simmer until thick and tender.

Place a piece of parchment paper on the baking tray to prevent sticking and spread it out evenly. If the weather is good, you can put it under the sun to dry, but I thought it was too slow, so I just used the air fryer to bake it directly.

Air fry at 140 degrees for 40 minutes to reach this state. If you want it a bit drier, continue baking, but at this time you need to watch it closely to prevent overcooking.

You can eat it directly or, like me, sprinkle some powdered sugar on it, so it won't stick together.

Strike a pose for the photo hehe.
