Dried Radish (Dried Cucumber) Pickles
Air-dried radish and cucumber strips rehydrated alongside plump peanuts, creating a chewy-crisp pickle whose concentrated, nutty savoriness rewards the patient drying process.
Instructions
- 1

Cut the radishes into strips and dry them with a dehydrator.
- 2

Cucumbers are halved and dried in a dehydrator (the following steps are the same, so only the method for radishes is shown).
- 3

Soak the dried radish in water for about two hours.
- 4

Soak raw peanuts (you can omit this or use roasted peanuts) in water, peel them, and separate them.
- 5

Peanut kernels are soaked in cold boiled water with a little salt and continue to soak in the water.
- 6

Once the radish is soaked, drain the peanuts.
- 7

Drain and set aside.
- 8

After soaking the dried radish, squeeze out the water.
- 9

Prepare the side dishes.
- 10

Crush into pieces.
- 11

Dried radish, peanut pieces, and chopped vegetables are all placed into the mixing bowl.
- 12

Add sweet bean paste, soybean paste, sesame oil, dark soy sauce, scallop sauce, white pepper powder, chili powder, chili oil, and toasted sesame seeds, and mix evenly by hand.
- 13

Place it in a container and let it sit in the fridge, occasionally stirring it up and down. The flavor will be about right in about three days. Those who prefer a stronger taste can add salt, but I don't add any because I’m afraid of it being too salty.
- 14

Eating this much at each meal is already quite a lot, so you should eat a light diet.
- 15

Eat, eat, eat, just make sure not to eat too much, so salty!!!
