Dried Radish Egg Fried Rice
Crunchy dried-radish egg fried rice: salted preserved radish is sizzled first for extra aroma, then scrambled with eggs and loose grains for a savory, texture-rich breakfast.
Instructions
- 1

Loosen the rice with a spoon. Later, when stir-frying, it will be easier to fry evenly. The rice you usually cook for eating comes out sticky and glutinous, which is not suitable for fried rice, but it's not necessary to buy rice specifically for making fried rice.
- 2

Crack the eggs into a bowl and prepare the chopped green onions.
- 3

Wash the dried radish and cut it.
- 4

Heat oil in a pan, add the dried radish and stir-fry a few times first, it will be more fragrant.
- 5

Move the dried radish to one side.
- 6

Pour in the eggs. Make sure there is enough oil in the pan before pouring; add more if there isn’t enough.
- 7

Quickly scramble the eggs.
- 8

When it is about to solidify, pour in the rice and quickly stir-fry it evenly. Since the rice clumps together, most of the movements involve pressing with the spatula and then stirring.
- 9

Add some salt, light soy sauce, and dark soy sauce, then continue stir-frying evenly.
- 10

Add some chopped green onions before taking it off the stove.
- 11

Stir-fry evenly and it's done.
