dried salted fish
Thick chunks of grass carp marinate overnight in soy, rice wine and ginger before being strung up to dry, concentrating into firm, savory fish jerky.
Instructions
- 1

Clean the grass carp and pat it dry.
- 2

Cut the fish into pieces about 5-7 cm thick;
- 3

Prepare the marinade: put salt, light soy sauce, a little dark soy sauce, shredded ginger, pepper, rice wine, and white sugar in a plate, and mix evenly;
- 4

Pour it over the fish pieces, mix well by hand, and let it absorb the flavor;
- 5
For more than a few hours, or marinate overnight, the next day you can skewer with bamboo sticks and hang to dry;
- 6
These are fish dried in the sun for a whole day and night. The surface moisture has dried. Continue drying until completely dry, which takes about 5 days, depending on the weather!
- 7
Rinse the prepared dried fish briefly with hot water, then steam it in a pot until cooked, and it’s ready to eat. It goes very well with rice and is very appetizing!
