Duck Bone Lotus Root Soup
A rustic pressure-cooked soup of duck bones and crisp lotus root chunks, yielding a clear, lightly gamey broth with pleasant starchy-sweet crunch from the lotus root.
Instructions
- 1

Prepare the ingredients and set them aside. Originally, the lotus root was supposed to be cut into chunky pieces, but it just so happened that we were stir-frying lotus root for lunch, so only a little was used.
- 2

Put the ingredients into the electric pressure cooker and add an appropriate amount of water.
- 3

Cover with the lid and set to soup mode.
- 4

Time's up, serve the seasoning.
